Crash Course

So I'm going into the Brick Oven tomorrow to work the line and see if I can get a job. The chef there, Jason, seems like a pretty cool, down-to-earth guy and really seems to love food and cooking. He took me on a tour of the kitchen and explained that he plans on making almost everything from scratch; sauces, pasta, stock... everything. Jason's enthusiasm combined with recently reading Anthony Bourdain's Kitchen Confidential, and being completely fed up with retail have made me really excited about getting this job.

Now, I used to have a line cook job at Cabanas Bar & Grill in Cape May. I really liked that job even though it was hot, sweaty, smelly and Mexicans threatened me with knives. That was three years ago though, and I barely remember what it is I used to do. Jason asked me about a bunch of cooking and prep techniques, only half of which I even recognized the names. As soon as I got home I started reading food blogs and wikipedia to see if I actually did know how to do any of the things he mentioned.

So far I have:
Chopped
Diced
Minced
Brunoised
Chiffonaded
Made Roux

Things that I used to do at Cabanas that I didn't know I did:
Sauté
Deglaze
Make stock
Sear
Braise
Blacken
and some other stuff.

There are a lot of things to know about cooking and hopefully I'll get this job and learn what they all are. Marie might even have to let me write for her cooking blog. We'll see.
